Great demand for lamb liver and tail fat!
During the pandemic period, the stars of the butchers were lamb liver and tail fat. As demand increased, prices also changed. The weight of tail fat and lamb liver exceeded red meat. Saying that the demand for meat increased during the pandemic period, the butchers from Konya stated that they did not raise beef.
During the pandemic period, demand for lamb's liver and tail fat increased, but lamb liver is hard to find in butchers. Stating that lamb liver production did not meet the demand, Akgöz Limited Company and Nalçacı Butcher Owner Çetin Akgöz said, “During the pandemic period, all products were demanded, but lamb liver and tail fat attracted great attention from the citizens. "Lamb liver and tail fat are difficult to keep up with the demand," he said.
'THE PRICE OF THE OFFENSE HAS INCREASED'
Stating that there is no increase in meat, Çetin Akgöz said, “The price of lamb liver is a little higher than the others. The price of offal as a product increased. There has been a very small price increase for other products, but we do not reflect them in our prices. The price of lamb liver and tail fat has also increased significantly. Meat prices continue on a routine basis. Our lamb meat costs 55 lira with us. The price of beef varies between 50-60 lira. The price of lamb liver exceeded that of red meat. Currently, the weight of a lamb's liver is around 80-90 lira. The reason for the low production of lamb liver; Due to the pandemic, restaurants etc. Since there is a restriction, the release is less, so there is less animal slaughter. That's why lamb liver does not meet the incoming demand ”.
'IT IS THE CHEAPEST PRODUCT'
Akgöz advised the citizens to consume meat and said, “While there is a 100 percent increase in other food products, it is now the cheapest product. For this reason, I recommend that citizens consume meat to be more energetic. Meat, head and offal, these are currently highly preferred. These are highly preferred as they increase immunity. We recommend citizens to buy meat from butchers. There are ready-made minced meat at very cheap prices. We advise them not to buy them, but buy the meat from the butchers they know and know. Meat is bought from the butcher, not from the market. Because we know better what the customer wants. We give him the best products so that they come back again. There is no such system in the market. They sell whatever is on the counter. We have 40-50 years old customers. We have been operating on Nalçacı Street since 1977. We continue this profession from father to son. We act with years of experience, ”he said.
‘PEOPLE TRY TO LIVE BACK TO THE OLDEST’
Explaining the reason for the increase in the demand for lamb liver and tail fat, Yüksel Butcher Owner Ekrem Yüksel said, “During the pandemic period, there was a lot of demand especially for lamb liver and tail fat. There is not much lamb livers available in butchers due to the high demand and low animal slaughter. And because lamb liver and lard are shown in the food programs on TV, people want to get their taste by wondering. The price of lamb liver is about 70 liras. Since tail fat is natural fat, people started to prefer it too much. Also, because of the pandemic, people now try to live in the past ”.
‘ANIMAL CUTTING HAS DECREASED DUE TO THE RESTRICTIONS’
Kılıçarslan Butcher Owner Yüksel Kılıçarslan said that there was a decrease in lamb slaughter as there were restrictions on restaurants and restaurants, and said, “During the pandemic period, there was a great demand for lamb liver and tail fat. The reason for the high demand is due to the longing for lamb's liver. People are now back to the past with the pandemic. Along with the demand, there was also a price increase. We always have tail fat but lamb liver does not meet the demand. Because it doesn't come in sufficient quantity. When you look at the slaughtered animals, a lamb's liver comes out of an animal, a lamb's liver comes around 750 grams. As such, it does not meet the demands. Also, because the cuttings are slow in the winter season, a limited number of lamb liver is served to butchers. "Lamb liver is about 25 more than red meat," he said.
'CITIZENS LOOK AT LABELS WHEN COMING'
Emphasizing that the purchasing power of the citizens has decreased, Kılıçarslan said, “I recommend that meat be bought from competent butchers. Markets usually buy ready-made meat. Markets buy goods that butchers do not like in the slaughterhouse. In other words, second class meats are usually sold in markets. When the citizen wants a piece of chunk, instead of giving it from the raft, there is a lot of tissue difference when the neck is given. There was a hike of 2-3 lira in the price of meat. But we have not yet reflected on our sales. Because during the pandemic period, there is no money left in citizens. They look at the tags every time they come. They ask, "Didn't you raise a raise?" He ended his words by saying, “We did not want to raise the lamb but now there is no hike in beef”
